I’m back!
Getting into my groove embracing everything Dutch again.
So I start by cooking a traditional Dutch stamppot dish befitting the weather nowadays – “Andijvie Stamppot”.

In case you do not know …
This Dutch cuisine called stamppot (translation: Mash Pot) consists of boiled potatoes, mashed and paired with one or several vegetables.
Vegetable such as sauerkraut, kale, spinach, turnip, brussels sprouts or carrot and onion (a combi known as hutspot) are all possible.

My family favorite stamppot is “Andijvie Stamppot”, a leafy green otherwise known as endive.
It is so easy and affordable to prepare. All you need is a kilogram of floury potatoes (±€2.00) and 400g fresh endive (±€1.40). Boil the potatoes, drain them and mashed the hell out of them. Because I am no whizz in the kitchen, I bought the Verstegen “Andijvie” spice mix (±€1.20) at the local supermarket to give it that ‘original’ taste. With this packet of mix, 50g butter, 100ml milk and not forgetting the raw endive, I gently ‘blend’ them all together into the pot of mashed potatoes. Throw in a delicious fatty meat on the side and voila, a quintessential Dutch meal is served!

Ideally, stamppot dishes are usually served with rookworst, Dutch smoked sausage. Substitute it with whatever meat you like or not at all.
Some say, sprinkle crispy bits of bacon are essential to jazz up the texture and blandness. Great tip!
Don’t forget to formulate some savory gravy (Dutch: jus) or use industrial gravy from a package (±€0.50) to lash it all over your stamppot. The Dutch like to make a well or a small hole in the middle of the stamppot, then fill it up with gravy till it overflows like a volcano. It is known as a ”kuiltje jus” (translation: little gravy pit). F-U-N!
