Maybe it's because I'm lazy, maybe it's because I'm busy (or maybe both haha), but I just LOVErecipes like this one!

First off, the prep work is more than minimal! We're talking slicing an onion and tossing a few basic ingredients together. Then, you simply pop your chicken in the oven and forget about it.

Well, don't forget it for real, please.I don't want to be responsible for a kitchen disaster and a house lit on fire.

I'll deny it's my chicken thighs recipe anyway. So, set your timer for an hour and when you're back, you'll have a delicious dinner ready to be devoured!

To keep this dinner lean and low carb, I served these easy baked chicken thighs with a simple salad on the side. However, if you wanted to you could add some potatoes and veggies on your tray. Think bell peppers, carrots, cauliflower, broccoli...

The veggies would soak up the juice and taste absolutely amazing!

Admittedly, my baking sheetwas just too small to fit everything. I'll definitely do that when I have a grown-up kitchen with a grown-up oven that can fit a bigger pan. One day soon, hopefully!

Easy Baked Chicken Thighs

Ingredients

  • 8boneless skinless chicken thighsabout 2.2 lbs / 1 kg
  • 9ozcherry tomatoes250 g
  • 1large white onionpeeled and cut into large slices
  • fresh thymeabout a handful
  • 2tbspbalsamic vinegar
  • 1tbspolive oil
  • sea saltto taste
  • freshly cracked black pepperto taste
  • 5garlic clovescrushed with the back of a knife - keep the peel on

Instructions

  1. Preheat oven to 356F / 180C.

  2. In a large bowl, combine chicken, cherry tomatoes and onion. Rub fresh thyme sprigs between your two hands and add to the bowl. Add balsamic vinegar and olive oil. Season with salt and pepper to taste. Toss until well combined.

  3. Place chicken on a large baking sheet, then arrange tomatoes, onion, and garlic around it.

  4. Bake for 1 hour or until chicken is cooked through, basting the chicken from time to time with the cooking juice. Serve with a mixed salad on the side.

      I'm not sure it would be good with chicken breasts. It might be too dry but it's worth a try!

        Marie, I just had thighs last night and they were fine, so I'll use them for this. I guess I'm remembering back when they had really strong flavor that I found unpleasant. But it's good that they're baked. I had my husband try to grill thighs last night and he was a very not happy camper because they essentially fell apart on him.

    OMGoodness, this was delicious! Just made it for dinner tonight and I have to tell you I've never cooked thighs before. I was always under the impression that they were super greasy (I've only really had them as fried chicken). But... delicious! And a very simple dinner to put together. I love how flavorful it was with so few ingredients. And I think I will add some baby potatoes to the mix next time like you mentioned, as the sauce it makes is wonderful.

    I love easy sheet pan dinner recipes that you can just pop in the oven and "forget about". Those blistered tomatoes look divine and I would go ahead and steal all of them as my reward for cooking!
