Italian White Bean Soup with Sausage Meatballs

Not many recipes deliver supreme comfort as well as great nutrition, but this classic Italian meatball soup is one of those rare finds. Healthy white beans, spinach, and lots of chopped veggies team up with savory meatballs and a splash of heavy cream to make everybody happy.

By far one of the best soups I’ve ever made! I replaced the spinach with kale, because I had it on hand and I prefer the texture. The broth has so many layers of flavor! I doubled the recipe so we would have some in the freezer. So, so good!

Crock Pot Beef Bourguignon

I’ve made classic French Beef Bourguignon traditional-style in the oven and also in the Instant Pot, but it’s the slow-cooker version that has gotten the most love over the years. It’s hard to beat a slow-cooker meal for convenience and coziness. When presentation matters, don’t forget the fresh herbs!

Made this for dinner last night. Soooo delicious! We did alter it a bit, the biggest thing probably omitting the cognac and just using wine, but the wine really made the dish. The meat was breaking apart, it was so tender. We have leftovers, of course. We got a few slices of sourdough bread to sop up all that delicious gravy! This is a keeper!

Creamy Tuscan Chicken Thighs

Instant Pot Cheddar Risotto with Fresh Sage

This one is a little bit of an outlier — it’s vegetarian, and very very simple. Why have you guys loved it so much? I think it’s because of the pure magic that is making risotto in the Instant Pot. The texture is consistently better than any that I have made myself on the stovetop, seriously. I’ll never make risotto any other way.

This was super easy and turned out PERFECT! Best risotto I’ve ever made. Thank you!

Ina Garten’s Mustard Roasted Chicken

I always find Ina Garten’s recipes reliable, so it’s no surprise that this delicious chicken make the list of all-time favorites. The chicken is marinated in a buttermilk, mustard, and garlic mixture and then baked to crispy perfection with a generous coating of seasoned Panko breadcrumbs. I like to serve it with roasted Brussels sprouts this time of year, but green beans, a big green salad, or roasted potatoes would also be amazing.

I was sent a picture of this from a friend and knew I had to try it myself! Due to the current state of the world, I only have chicken tenderloins on hand, but figured I’d wing it anyways. And I’m so so SO glad I did! This is now going into my regular recipe rotation!

Pork Chops with Creamy Mushroom Sauce

Cooking pork chops in the Instant Pot turns what used to be an all-day affair in the slow cooker into a weeknight ready recipe that feels gourmet. The creamy mushroom sauce is a versatile recipe on it’s own that would be great with chicken or pasta, too!

I just tried this recipe last night. BEST. CHOPS. EVER! They were so tender that they almost flaked apart like fish does. Definitely did not need a knife to cut them. They were so full of flavor and very moist. This is the only way I want to eat pork chops from now on.

Sheet Pan Peppers and Brats

This is a bright, satisfying, and super easy to prep meal that is great for any size crowd. Peppers, onions, and brats get cooked together on a sheet pan and served up with buns and lots of grainy mustard!

I’ve made this a few times and have really enjoyed it each time. I never eat it with a bun but I’m sure that would be delicious too. Tonight I used a green (half), yellow, and orange bell pepper. The peppers mixed with the juices of the brat add just the right amount of savory flavor with a hint of sweetness. Bonus: it’s so easy to make. Thank you for a great recipe!
